Description: Today I am making Tacos Gobernador or Governor tacos. The origin of these delicious tacos dates back to the 1990's in Mazatlan, Mexico. Governor Francisco Labastida Ochoa mentioned that he loved the shrimp tacos that his wife makes. The owners of Los Arcos restaurant got wind of this and wanted to recreate the Governors wife's shrimp tacos. With the help of the Governor's wife, Mrs. María Teresa Uriarte de Labastida, Tacos Gobernador was created. The restaurant made this a menu item and prepared them for the Governor's visit. I believe corn tortillas were used in the original recipe.
